Triskell Bakery New Kids Bread classes.

Sarah Danger and I taught our second Junior Baker bread class this past week at Cool Beans Café. Our six students (Alice and her brother Jude, Braden, Lucy, William and Liam) were outstanding. They learned (or practiced) using a scale, made their dough by hand, performed “slap and folds” methods to develop the dough scored and baked their loaves while moms and dads enjoyed a few French pastries (my new Kouign Amann recipe) . We also had the presence of my friend and photographer Brooklyn Michelle (Brooklyn Media) who captured the moment.
